Cooking for my son
My wife died in December 2022. I am 72 now, more than five years retired, and my main responsibility is caring for my 19yo son, who has Down Syndrome. It's pretty light duty, my wife worked hard to teach him to care for himself as best he could, and he doesn't need my help with much. He makes his own breakfast and lunch, while I restock the pantry as needed.
Given the right menu he could also make his own supper, but we like having a meal together, and some of what he likes to eat might be tricky for him to handle. All his favorite meals are simple, so we've set a seven-meal menu that repeats every week. He likes the routine, and I like the low effort.
I'll post the menu herewith, with annotations, to encourage folks in like situations.
